As promised, here is the recipe of the Palada Payasam that I showed you in this post. For the benefit of readers who are unfamiliar with this dessert, I shall first tell you what is palada paayasam...
So what is 'payasam'? It is similar to the North Indian 'Kheer' or the English 'pudding'.
What is 'ada'? It is made from whole rice that has been pressed into small rectangles.
'Palada' is so called since the 'ada' or pressed-rice rectangles are cooked in milk.

Palada Payasam Recipe
Ingredients
Readymade Rice Ada - 100gms (3/4th teacup approx.), washed in cold water (the smaller the 'ada' pieces, the better)
Full-Fat Milk - 11/2 litre (6.3 teacups approx.)
Sugar - 21/2 to 3 teacups
Cardamom powder - a pinch
Ghee - 1/2 to 1 tsp (for adding in milk and 'ada')
Fried Cashewnuts and Raisins (optional)

Procedure
- Soak the ada pieces in boiling hot water (enough to cover them) for 20 minutes. Drain the excess water and keep the ada aside.

- Pour the milk into a pressure cooker (of approx. 5 litre capacity).

- Add washed and soaked ada.

- Add sugar.

- Mix nicely.

- Close the cooker and place the whistle on top. (Milk may foam out when it whistles, so clean with cloth if required.)
- After the first whistle, continue to simmer on low flame (with whistle), for approximately 20 minutes. (After the first whistle, you can simmer for 20 min keeping the cooker closed with whistle, or cool the cooker, open and simmer. Basically, you have to cook the ada till it is of melt-in-the-mouth, soft consistency.)

- Keep stirring till the ada is well cooked and the mixture thickens and turns into a pale, pink color. Now, add some ghee.

- Finally, add cardamom powder. Palada payasam is now ready!!!
